Little blue Lunchbox - Recipes on the Go: Pumpkin Pan
A warm recipe for the colder time of year? My pumpkin pan is just the right thing. Simple, delicious, and really warms you up nicely!

Ingredients
- 1 medium-sized pumpkin (cut into small pieces) see Note
- 1 onion (diced)
- 2 cloves of garlic (chopped)
- Vegetable broth
- Sun-dried tomatoes (sliced)
- Olives (pitted and halved)
- Feta cheese or Parmesan for garnish (can be omitted or replaced with vegan alternatives)
- Salt and pepper to taste
Instructions
- Sauté pumpkin, onion, and garlic in a pan.
- Deglaze with vegetable broth and let everything simmer until the pumpkin is soft and the liquid has evaporated.
- Add sun-dried tomatoes and olives.
- Season with salt and pepper.
- Serve hot!
- If desired, you can add Parmesan or feta cheese, but this is optional and can also be omitted or replaced with vegan alternatives.
Note: *The smaller the pieces, the quicker the pumpkin cooks, saving gas.
Tip: Instead of on the camping stove, this can also be wonderfully done over the campfire or in the oven at home, because even if you’re not camping in the winter, this recipe tastes especially good in lousy rainy weather!
